Pineapple is one of the most relished fruits in India. In the present literature review, several pineapple varieties like Cayenne, Queen, Spanish, Abacaxi, Kew and Mauritius have been enlisted as well as some pineapple based products like canned pineapple, candied pineapple, pineapple fruit cake, dehdrofrozen pineapple and some other healthy pineapple products have been documented. The processing techniques like canning, baking, osmotic dehydration, freezing, extrusion of fruits etc. for the said products have also been discussed together while describing the products. Some modern packaging techniques have also been discussed to keep the pineapple products available round the year. Some of the products that has been commercialized and ought to be commercialized has been drawn attention in this literature review as pineapple is very important in terms of medicinal values

Pineapple is widely taken for fresh consumption as well as their flesh and juice are used for preparation of different product in agro-processing industries. For such industrial processes, it is important to have the information of the physical and chemical properties of pineapple. Four varieties of pineapple, eg., Honey Queen (HQ), Giant Kew (GK), Asshini and Ghorasal were collected from the districts of Tangail, Sylhet and Narsinghdi.. Physical and chemical properties such as weight, length, diameter, color, odor, firmness, appearances, sweetness, moisture content, ash, edible portion and total soluble solids (TSS), pH, titrable acidity (TA), total sugar, reducing sugar, ascorbic acid of pineapple juice were analyzed in this study. This study examined the sensory quality of the pineapples. The firmness of pineapple fruits measured in outside and inside to be 0.21 to 0.27 N/m 2 and 0.06 to 0.10 N/m 2 respectively. The pH values of the four varieties were found to be in the range of 4.30 to 4.36. The highest and lowest sweetness index was estimated to be 36.30 for honey queen and 22.15 for asshini. The highest and lowest magnitude of sugar contents of four pineapple varieties were found to be in the range of 14.16 to 15.8 mg/100g. The average TSS values were found to be 15.12%, 12.33%, 13.14% and 12.95% for HQ, GK, asshini and ghorashal, respectively. So the comparative study indicated that the honey queen is superior to rest of the varieties of pineapple irrespective of nutritional content as well as sweetness.

For such industrial processes, it is important to know the information of characteristics changes of pineapple during day after storage. Four varieties of pineapple were collected from different areas of Bangladesh named Honey Queen (H.Q), Giant Kew (G.K), Asshini and Ghorasal. Some Physico-chemical properties (weight loss, moisture content, ash and edible portion, pH, TSS, titrable acidity (TA), total sugar, reducing sugar) biochemical properties (ascorbic acid) and sensorial attributes (color, odor, firmness, appearances, sweetness and overall acceptability) of pineapple juice were studied during day after storage. This study examined the Comparison of different varieties of pineapple fruit characteristics and sensory quality of the pineapple fruits during storage. It was shown that there was a significant changes between the storage periods in relation to different varieties of fruits. Pineapple is an important crop for tropical countries. It is consumed as fresh fruit as well as processed or canned, dehydrated and juice products. Even though it is grown in more than 82 countries around the world, there is a remarkable lack of commercial varieties. 'Smooth Cayenne' is the only cultivar which dominates the trade and pineapple industry. Conventional breeding has yielded very poor results making genetic engineering particularly suitable for genetic improvement of pineapple. Tissue culture regeneration has been widely reported in pineapple making genetic engineering more amenable. Genetic engineering also offers the means for manipulating horticulturally important traits without altering the cultivar phenotype. This review provides an overview of the genetic transformation efforts carried out in pineapple.
