As you can imagine, after years of chicken frying, she perfected the technique and could fry up delicious chicken. In my childhood, we had fried chicken every Friday. I just absolutely love it. The crunch, the spice, the tangy, the savory, the crispy. Throughout my adult life, some of my favorite times, with my favorite people, have involved fried chicken: Jazz Fest, Mardi Gras, July 4, you get the drift. In order to perform well in life, our body needs energy. We get this energy from the food we eat. Without food, there will be no life. In today’s world, there are so many dishes available worldwide. Food comes in a wide variety all around the world. Dosa, Paneer, Naan, Chapati, Biryani, and more Indian delicacies are available. We are also offered western cuisines such as noodles, pasta, burgers, fries, pizzas and more dominating the food industry. In my favourite food essay, I will tell you about the food I like eating the most.

My Favorite Food

As the world is advancing day by day, it is becoming easier to get access to many kinds of food at our doorstep. Every day, we all want to consume great and delicious cuisine. There are many different varieties of food accessible all throughout the world. We all like different foods, however, my personal favourite is burgers. I have eaten many cuisines but my favourite food is definitely a burger. I cannot resist myself when it comes to burgers.

Burgers are one of the most convenient and easiest foods to eat on the fly when we’re in a hurry. We can have a burger at any time of day, whether it’s breakfast, lunch, or supper, and maybe some fries and a Coke to go with it. Many restaurants are well-known for making their speciality burgers in a particular style. Preparation changes from one establishment to the next. But what exactly makes a burger taste so good? They will taste vary depending on where you go, but they are all built the same. It is made up of a bun, a ground meat patty, and various toppings like cheese, onion slices, lettuce, and other sauces.

They are so soft yet crunchy, fresh and juicy that I love eating them. Even though there are many kinds of burgers, my favourite one is a chicken burger. The chicken patty gives the burger a juicy taste and it tingles my taste buds every time I eat it. I can already smell and taste it in my mouth as soon as I walked inside McDonald’s or any other restaurant that serves chicken burgers. As soon as I take a huge mouthful of it, I forget about any problems or troubles that are going on in the outer world and concentrate my entire concentration just on my chicken burger.

I love eating a burger which is filled with cheese and vegetables . The more vegetables you add, the better it tastes. My personal favourite is lettuce. It gives the burger the right amount of freshness and crunchiness.

I always eat my burger with ketchup. Most importantly, the thing I love about eating burgers is that I get to eat French fries along with them. They work as a great side to the dish and also make my stomach full.

Even though I liked eating a burger from a famous fast food joint, nothing beats the chicken burger my mother makes at home. She prepares everything from scratch, even the burger. Thus, it is extremely fresh and healthy too.

I know and feel that burgers have the great flavour and taste that would make anyone’s stomach pleased after a long day of work. I can tell by the reactions on people’s faces when they order their preferred burger variant. Overall, I don’t believe any other fast food will taste as good as a chicken burger. It’s just difficult to think that something will triumph in the future. As a result, I consider my favourite dish to be the best ever created.

A Great Variety

Perhaps the great thing about burgers is the great variety they offer. It has options for all people, who prefer vegetarian, non-vegetarian and even vegans. Thus, you can select the patty of your burger and dive right in.

There are a large number of burger joints being started in every corner of the city, each serving a variety of their own specialised and self-curated recipes. Burgers that are health-friendly and a go-to with a diet are also being introduced by these newly upcoming burger places. There are a lot many burger cafes that give their customers the choice to create their own burgers by providing them with a choice between patties, fillings, veggies, sauces as well as the number of burger layers they want.

Even though my personal favourite is a chicken burger, I also enjoy eating cheeseburgers and vegetable burgers. For me, all burgers taste delicious. Whenever we go out to eat with friends , I always order a burger.

My friends who do not eat non-vegetarian also eat burgers thanks to the great variety it offers. When we order food at home, we make sure to offer all kinds of burgers from cheeseburgers to chicken burgers, so that we get a taste of everything in our meal. Thus, I love burgers and their great variety makes it better.

Even though my favourite food is a burger, I enjoy other foods as well like Pizza and Pasta. However, I feel when it comes to eating daily, nothing beats homemade food. The food we eat daily is what helps us gain energy. We cannot eat our favourite food daily as it will become boring then, but our staple food is something we enjoy eating on an everyday basis.

Answer 2: No, never. Favourite foods are meant to be enjoyed when there is any special occasion, or when you are tired of your regular homemade food. Eating too much of your favourite food will make your taste buds adjust to it and eventually, it will not remain our favourite. Excess of anything is bad and the same goes for our favourite food. Thus, we must eat it occasionally so that it remains our favourite.

Answer 3: Fast food is often high in calories, sodium, and harmful fat, with one meal frequently providing enough for a whole day. It is also deficient in nutrients and nearly devoid of fruit, vegetables, and fibre. That doesn’t mean you should completely avoid fast food. It is feasible to eat fast food without jeopardising your healthy diet. Take advantage of the nutritious side dishes available at many fast-food places. Look for meals that include lean proteins, vegetables, and fibre, and avoid anything that is supersized.

A Popular Dish | You can choose a pizza based on your appetite because it comes in various sizes and shapes. They can be consumed at any time of the day for breakfast, lunch, or dinner, and possibly some fries and a beverage. Pizza is a popular dish with many popular restaurants serving various specialties of it, including Chicago Pizza, La Pino's, Domino's, and Pizza Hut . Every restaurant has a different preparation technique.

Preparation | What exactly makes pizza taste so good? Where you go will affect how something tastes. The fundamental components are the same, though. The base is is made with all-purpose flour (more healthy flour may also be used). Once the base is prepared, cheese, sauce, and veggies (toppings) are added before it is baked. I generally prefer medium-sized pizzas because I feel it is enough for me and I do not have a big appetite.

The variety in which pizzas are available is one of their best features. One can choose from vegetarian and non-vegetarian pizzas depending on their taste. You can pick the toppings you want. Pizza eateries are increasing in number all over the country and offer a wide range of distinctive, specialised, and self-curated menus. There are many different crusts, toppings, shapes, sizes, and even cheese types to pick from (cheddar, mozzarella, etc.).

Pizza is a food that both my buddies and I enjoy a lot. We always order pizza whenever we hang out at home or in a restaurant. The abundance of options in pizzas enhances our liking for them.

Pizza Mixes Different Culture

Pizza is an Italian dish, but when prepared by and for people of a different culture, it may be simply adapted to meet the needs and satisfy the tastes of that population. For instance, many pizzas in India contain paneer as a topping, which is incredibly popular. All new varieties of pizza, such as ‘paratha pizza’,’momos pizza’, and ‘pasta pizza’, are constantly entering the market. This is done to broaden the pizza consumer base and boost its appeal. It also results in the blending of cultures because folks who didn't like pizza begin to enjoy it once their preferred topping, sauce, or other culinary item has been combined.

Although pizza is still my favourite food, I also enjoy burgers, pasta, and Indian food. But home-cooked food is incomparable when it comes to maintaining a balanced diet. Our daily diets contribute to the health of our bodies and the bolstering of our immune systems. Eating our favourite foods every day is not practical because it would not be very nutritious and also get very boring. We should prioritise eating at home and indulge in our favourite junk food only sometimes.

In addition, the variety of cuisines makes it hard for people to decide which cuisine they like best. The best way to choose a favourite food is to look at the different elements that are involved in that particular food. For example, if you would like to choose a favourite food that is sweet, then look at the numerous desserts that are available in the food market. It is also important to look at the other foods that are available so that you can make a comparison of them with your favourite food.

For example, on the weekend he would make fresh chicken soup and fried rice for us to eat. I always thought it was delicious! I’ve always liked chicken soup ever since then.

When I eat it there is a certain amount of satisfaction, and for some reason, I just can’t get enough of it! But the most important reason that I love chicken is that it reminds me of home.

It also contains various vitamins and minerals that are important for your body. Chicken also has less fat than other types of meat, which makes it a healthier alternative. Chicken is also low in iron, vitamin C, folate, zinc, and other important nutrients which are necessary for good health.

My Favorite Food

My favourite healthy food is tomatoes. I love tomatoes because they have a high nutrient content like vitamin C and fibre, which makes them one of the best foods to eat if you want to maintain a healthy lifestyle. Tomatoes are also an excellent source of antioxidants that can help protect us from cancer and other diseases. I also ensure that I drink adequate quantities of water as it helps me stay hydrated. I also like to eat pasta, because I can eat it without feeling guilty. I know that it is healthy for me and does not have any added ingredients. This is why I feel comfortable eating it, even though I am picky about my food.

My favourite food is healthy, it’s also delicious and can be chosen in different ways. I like chicken and tomatoes because they’re nutritious. In my opinion, the healthiest food for us humans is plants. This is because our lifestyle is more sedentary and we require less calories than ever. Regardless, a healthy lifestyle is paramount and eating well is part of that. Also, a healthy diet is one that should be varied and balanced.

If you’re a meat-eater, fried chicken is one of those unquestionably delicious foods. There’s some magical quality to the combination of juicy chicken and crispy crunchy fried coating, the mere mention of which sets off cravings.

Most of us don’t need to think much further than that – we just know we want to eat it. But what exactly is it about this dish that makes it so enticing?

There’s more to the appeal of the humble fried chicken than you might think: from the chemistry of frying to a deep-seated evolutionary response to the dish’s basic nutritional components. We’re diving in a little deeper, with help from Professor Russell Keast – Director of CASS Food Research Centre, Deakin University, whose research focuses on the taste system and its relationship to dietary consumption. Read on to find out what’s going on with fried chicken, and why we just can’t seem to get enough.

For a good fry, push the temperature high Texture is a massive reason why fried chicken works. There’s more than one way to fry a chicken, but for the results we crave, it has to be deep-fried – which means having enough fat in the fryer to fully suspend the chicken. “Obviously frying is usually done at a high-ish temperature, so 160 to 180 degrees, if we’re talking a deep-fryer,” says Professor Keast. At these temperatures, the oil is “cooking the proteins and creating flavour with the interactions between protein and starch, where you’re getting the caramelisation, or things called ‘Maillard products’” – a result of the Maillard reaction, which creates browning and depth of flavour.

“You’re also removing moisture,” says Prof Keast. “So anything above 100 degrees, you’re pushing the moisture out, and this creates things like the crunchy textures we associate with fried foods.”

It’s all about that crunch Done properly, deep-frying creates a satisfying contrast between the crispy-crunchy coating and tender chicken. Beyond that simple textural enjoyment, the crispness actually sends our brain a message that the food itself is in good condition.

“We’ll associate that crunch or the crispness… with things like freshness,” says Prof Keast. “If we think about another processed-type food like a potato chip, you bite into a potato chip, it’s crisp, you’re getting that sound coming through it. It comes through the jaw bones, vibrates to the ear. So it’s actually a physical process during mastication that’s creating the sound that reverberates on the jaw bones and takes it to the ear. So it’s not just what we’re hearing through our ear, it’s actually transmitted through the jaw to create the sound and the impression that we’re getting from the food.

“So you have a potato chip that’s not quite crisp, that’s a little bit soggy – all of a sudden our quality experience of that food is greatly decreased.”

Salt, fat, and millions of years of practice Cast yourself back a few hundred million years to a hot, humid world in which our ancestors were yet to experience the simple pleasures of ready-made food. Basic elements of nutrition such as salt and fat – so readily available now – were often in short supply in the natural world, and that influenced our modern appetite.

“We don’t have great bodily stores of sodium, so we needed to replenish it,” says Prof Keast. “We needed a response that told us if we came across something with [...] physiologically relevant levels of sodium in it, to consume that. So what we now term our ‘hedonic response’, or our liking – that’s the key thing which is associated with it.”

Combine this with a similar evolutionary response to fat, and you can see how our love for these foods became ingrained. “When we come across these combinations of salt and fat [...] our brains are going, ‘This is brilliant’, our evolutionary brains are going, ‘This is fantastic, I’m getting these things which are absolutely essential to me’. Hence the liking of these foods and the drive to consume them.”

Ironically enough, the first time I really experienced a Max’s Restaurant fried chicken meal was when I was 18 years old, in Glendale, California. Yes, I did grow up in Manila. No, I didn’t live under a rock. In the ’90s, it was just that my family gravitated towards other spots like Whistlestop with its 24-hour breakfasts, and Racks with its baby back ribs. So when I had my first taste of Max’s iconic chicken—its crisp skin and juicy meat paired with sweet potato fries and that ubiquitous condiment mix of banana ketchup, Worcestershire sauce, and hot sauce—I was instantly smitten.

It turns out that 71 years ago, American soldiers felt the same way, but their first Max’s fried chicken experience was in a home along Scout Tuazon street in Quezon City. The year was 1945; Maximo Gimenez (or Max, as his newfound American friends fondly called him) and his niece Ruby Trota lived in a family compound across the base camp and would regularly invite American troops over for food and drinks. Ruby would whip up familiar Western dishes, like steak and fried chicken, eventually coming up with a special fried chicken recipe that was an instant hit. A perfect chicken recipe combined with Ruby’s never-ending generosity and first-rate hospitality was what initially launched Max’s Restaurant decades ago, and it’s what keeps it going today.

“Our lola was an incredibly generous host and it was through food that she was able to make people happy,” says Jim T. Fuentebella, one out of the seven grandkids who sit on the board of directors for the expanding Max’s Group—which, it should be noted, has rapidly grown to include 13 different brands (including both Filipino chains like Dencio’s and American stalwarts such as Krispy Kreme and Jamba Juice).

“That’s the soul of what defined her.” And the values that defined Ruby Trota are what continue to drive the third generation of Trotas, as they manage to preserve their family culture and tradition despite the change in dynamics—especially after the group became a publicly-traded company in 2014. Jim’s brother, Dave T. Fuentebella, expounds on the importance of family members sharing similar values. “We take trips every year, all of us cousins, and we spend time together eating, mostly,” shares Dave. “This is really part of making it work in the boardroom. Not all genius ideas happen in the office. The fact that we actually get along helps resolve things faster. We’re able to level up to the next idea.” The ability to separate oneself from the myriad roles each person plays—whether it’s the role of family member, board member, or a specific departmental role within the organization—greatly helps when making board-level decisions. And as Jim and Dave claim, everything they do stems from Nanay Ruby. Would it be something she would do? Would it be something she would be proud of? This driving force pushes the third generation to continue paying tribute to their beloved grandmother, mainly by treating customers the same way she would. Max’s success can only be attributed to its pure intent of being a generous host—the same way Nanay Ruby was.

Throughout Max’s seven decades of existence, they have slowly done their part in putting Filipino food on the global map. With the first foreign branch opening in 1982 in San Francisco, California, to their more recent restaurant openings in the Middle East, their sarap-to-the-bones fried chicken has reached an even wider audience. More recently, Max’s has even gained recognition from the likes of Los Angeles-based Pulitzer Prize-winning food writer Jonathan Gold, who added Max’s to his list of favorite Asian fried chicken dishes, calling it “lightly vinegary, beautifully crisp” while emphasizing the importance of eating it with banana ketchup. This alone is a big deal.

“Our goal [when opening restaurants abroad] was to redefine Filipino cuisine. That’s why when you eat at Max’s restaurants abroad you’ll see signs that say ‘Cuisine of the Philippines’ instead of ‘The House that Fried Chicken Built,’ which is too vague for the market overseas,” explains Jim. The draw will always be the winning fried chicken and sweet potato fries, but once people who are unfamiliar with the Max’s brand start trickling into the restaurant they’ll find other Filipino dishes worth loving, too. “All we need is a tipping point,” adds Jim. “Our fried chicken isn’t an acquired taste. It’s tasty and people enjoy it. Once people try it, then start opening themselves up to other Filipino dishes, an awareness for Filipino cuisine will be raised.”

Thinking back to my first dining experience at Max’s in Glendale when I was a homesick college student reinforced the notion that Max’s is synonymous to a true Filipino dining experience. From the sincere hospitality, to the comforting lutong bahay flavors of the dishes—and that stellar fried chicken, of course—I felt like I was home. It’s interesting to see how things come full circle for a homegrown establishment like Max’s Restaurant. What started out as pure generosity towards people from the United States has now turned into a growing food empire that serves Filipinos all over the world—and gaining international recognition to boot.

So here, an ode to Max’s iconic Original Classic Fried Chicken. Thank you for being a reliable constant. Thank you for always being there, not only for people who crave for a taste of home, but for people who crave comfort in a home away from home. Thank you for bringing global awareness to our wonderful country, proving that the Philippines is more than just balut or a mish-mash of turo-turo dishes. Strangely enough, the first chicken dishes I learned to cook pre-culinary school were Italian—chicken cacciatore and chicken piccata—not soy sauce or Hainanese chicken. I chalk it up to watching a lot of non-Asian cooking shows on PBS, like Cucina Amore and Lidia's Kitchen . My parents never complained because, let's face it, it took cooking dinner off their backs. And, for the most part, they enjoyed my culinary experimentations.

This collection of tried-and-true Italian recipes with chicken includes classics like chicken Parmesan, chicken marsala, and chicken piccata that incorporate plenty of tips to improve upon standard methods. We also take a little creative license with some dishes, like chicken cacciatore and chicken scarpariello, both of which have always been open to interpretation. Whether you like it breaded, fried, simmered, or grilled, these recipes and technique will help you cook a better chicken, Italian style.

Chicken Marsala

To the pre-chef me, any dish with liquor in its name sounded grown-up and sophisticated—especially if there was potential flambéing involved. Though chicken marsala may sound fancy, it's essentially a chicken-with-pan-sauce dish that requires following a few fundamental rules: brown the chicken cutlets well; bloom some gelatin in stock and deglaze; and finish with butter and a little soy sauce to round out the savoriness of the sauce. Pollo al Mattone (Italian Roast Chicken Under a Brick)

I'd never heard of cooking chicken al mattone, or "under a brick," until I started working at an Italian trattoria in San Francisco, where every morning the chef would lay rows of spatchcocked birds on the flat-top grill and weigh them down with foil-covered bricks. This Italian method produces crispy, burnished skin in no time. In truth, you can use pretty much any heavy object, such as a barbell plate weight or pair of dumbbells on top of a frying pan, or even a cast iron skillet weighed down with a couple of cans of tomatoes.

Lemon-Marinated Tuscan-Jewish Fried Chicken

Fried chicken may not seem like a particularly Italian dish, but this golden, crispy lemon-marinated iteration can be traced back to Tuscan Jewish roots. A short marinade in a garlicky lemon juice brine keeps the chicken tender and juicy, while double-frying the battered chicken (simply dredged in flour and dipped in beaten egg) makes it extra crispy.

Chicken Cacciatore With Red Peppers, Tomato, and Onion

There are as many ways to make chicken cacciatore as there are Italian cooks...and cookbooks. "Cacciatore" just means "hunter-style," so there's no such thing as a true chicken cacciatore, which gave Daniel freedom to riff on other iterations to come up with this fairly quick-to-make version with red peppers, tomato, and onion. It has all the deep flavor and tenderness of a slow-cooked dish. For a more earthy rendition, try Daniel's chicken cacciatore with mushrooms .

Chicken Scarpariello (Braised Chicken With Sausage and Peppers)

Chicken scarpariello is another easy one-pan Italian chicken dish full of loosey-goosey interpretations. This version starts with well-browned, seasoned whole chicken pieces and browned Italian sausage, peppers, and onions. Jarred pickled cherry peppers, pickling juice, sugar, and chicken stock form the basis of the sweet and sour sauce. To maintain its crispy exterior, the browned chicken sits skin-side up on top of the sauce and the vegetables while it finishes cooking in the oven.

Grilled Chicken and Peach Saltimbocca Skewers

Last week we published a project we’ve been working on for quite a while: a list of 57 sandwiches that define New York City . (Someone named Dave in the comments generously suggested we rename the list, “Making Everyone Who Ever Left NYC Regret Their Choices.”)

You can imagine that narrowing down all of the city’s sandwiches was a very, very tall order. Across the five boroughs, there are iconic sandwiches, good-for-a-specific-use-case sandwiches, criminally underrated sandwiches and wonderful dishes that may or may not technically be sandwiches. (Many heated debates were had.)

In over 700 comments on the story and on social media , readers shared their opinions on our list. There was plenty of excitement, of course, and there were quite a few polite reminders of sandwiches we may have overlooked. So we asked for your top sandwiches. Below are 13 of our favorite submissions, which have been edited and condensed.

Johnny Roastbeef

John’s Deli , Gravesend, Brooklyn

This masterpiece takes almost 15 minutes to construct. (The sign says, “If you’re in a hurry, don’t bother.”) On classic local bread and ridiculously good ingredients, it is a link to the roast beef palaces of yore. When my brothers and I were selling my father’s house in the neighborhood, I brought a couple of these sandwiches back to the house while we waited for real estate agents. We all swooned, remembering lunches like this with Dad.
