Yummy Thai offers favorite dishes of Thailand and Japanese sushi in Pueblo West

Dishes highlighting the cuisine of Thailand and Japan are among the eclectic offerings at the new Yummy Thai restaurant in Pueblo West.

Located at 198 S. Purcell Blvd, Suite 120, the restaurant is a spin-off of the Yummy Thai in Cañon City. The restaurants are owned by Say Tribble and her brother Eh Doh.

"The Yummy Thai in Cañon City opened almost three years ago and it was doing good so we thought Pueblo would be good too, with the larger population. We opened the Yummy Thai in Pueblo West in June," Tribble told the Chieftain.

Tribble runs the Cañon City restaurant while her brother oversees the Pueblo West eatery and they employ eight workers between the two. Tribble has worked in Japanese, Chinese and Thai restaurants in the San Mateo and Oakland areas of California.

She said it was Colorado's beauty and slow pace of life that drew her to the area. So far, the Pueblo West restaurant's favorites are Pad Thai, the sesame chicken, the spicy crispy chicken and the curry dishes which include green, red, yellow and panang which includes coconut milk.

The Pad Thai "is very popular," she said, and features sautéed rice noodles, bean sprouts, eggs, tofu, green onions tamarind sauce and peanuts. The dish can be made with vegetables, tofu, or a choice of chicken, pork, beef shrimp, seafood, duck, or lobster.

Vegans can just tell their server about their dietary preferences and the meal can be tailored without meat or eggs. "Gluten-free, we can do that too," Tribble said.

Yummy Thai even offers a combo Pad Thai with chicken, beef and shrimp. The "Pad Mama" features ramen-style noodles.

"Thai food is spicy and we use the fresh ingredients of Thailand. Japanese sushi rolls have a lot of fresh fish — I love the lobster roll," Tribble said, pointing out "the avocado roll is the favorite" among customers.

The restaurant also offers a spicy Pueblo roll with shrimp tempura, asparagus, cream cheese and surimi topped with tuna, salmon, tempura flake, spicy mayo and eel sauce.

Hours are 11 a.m. to 3 p.m. for lunch and 4-9 p.m. for dinner daily except Wednesday. The restaurant closes at 8:30 p.m. on Tuesdays.
