  • 3 1/2 custard buckets or 13kg of dried zobo leaves (broken leaves).The broken leaves yeild more than the unbroken (whole) leaves and they are also more expensive than the unbroken zobo leaves.
  • 10 big pineapples (peeled and cut into pieces)
  • 250g of fresh ginger (blended)
  • 200 liters of water 200g of clove
  • 5kg of sugar (adjust to taste) or 6kg of dates if you want to make zero sugar zobo drink.
  • 10 pieces of lime (cut in pieces)
  • 4 sticks of cinnamon (ground into powder)
  • 30g of sodium benzoate and 50g of potassium sorbate for preservation mixed in 200ml water.

How to process your zobo drink

To process your zobo drink or hibiscus tea, do the following:

  • Wash the zobo leaves. While washing, some colours will go out. Don’t bother about that as the zobo leaves or petals are rich in colour.
  • Wash the back of the pineapples preferably scrub them under running water with a brush as you are going to use the peel as part of your ingredients. Once you are done watching it, cut it and put the peels aside for later use. Cut the pineapple into pieces and use a juicer to bring out the juice. If you don’t have a juicer, use blender. Once you are done blending it, use a strainer to separate the pulp from the juice and set it aside. Also keep the pulp separately.
  • If you want to use dates as sweetner, wash the dates and soak in water over night if they are dried dates. Once they are soft, remove the seeds and blend them with blender until they become smooth and turn to paste. Set it aside.
  • Wash and blend your ginger. Set it aside.
  • Wash your lime and lemon and cut them in pieces with their backs intact.
  • Wash your cloves and blend them too.
  • Set your pot on the fire. Pour water, add the pineapple peel and pulp, cloves, ginger, and the dried zobo leaves and cook for 30 minutes. Once done, pour out the zobo concentrate into another container, add water again to the leaves in the pot, cook again for 15 minutes. Repeat this until you get your 200 litres of zobo. You can do this upto 3 times to ensure you get all the redness out of the zobo leaves. Allow to cool down to room temperature. Pour the pineapple juice and the dates into the zobo concentrate and stir well. Then strain the zobo concentrate again to ensure there are no particles in it. Pour it into your dispensing tank or bucket with tap and pour into PET bottles for sale. If you are using sugar instead to sweeten it, add the sugar instead of dates.
  • If you don’t want to use natural pineapple juice to flavour it, use pineapple flavour like Fresh or Viva pineapple powder flavour and add to taste.

Hibiscus (or bissap, as it is called in Senegal) is a valuable and versatile crop whose brightly coloured, star-shaped flowers are prized for their tart flavor, and can be made into a long list of by-products. Hibiscus jellies, jams, fruit pastes, traditional medicines, teas, syrups and refreshing drinks can be found in almost every market stall in West Africa. These beautiful flowers have a high concentration of vitamin C and have been proven to medically reduce high blood pressure.

Hibiscus flowers are multi colored and varied. About 200 species of hibiscus are known to exist, and each species has its own unique kind of flower. Hibiscus flowers are alternate, ovate to lanceolate leafs, often with a toothed or lobed margin.

The flowers are large, conspicuous, trumpet-shaped, with five or more petals, color from white to pink, red, orange, purple or yellow, and from 4–18 cm broad. Flower color in certain species, such as H. mutabilis and H. tiliaceus, changes with age. The fruit is a dry five-lobed capsule, containing several seeds in each lobe, which are released when the capsule dehisces (splits open) at maturity. It is of red and white colours.

In Nigeria, Hibiscus flower grows nearly throughout the year, though its peak production is during the dry season of November to April of the following year.

Dried hibiscus flower is used in the production of hibiscus tea. Hibiscus tea is a caffeine free herbal tea from a special type of hibiscus, called Roselle, the scientific name is Hibiscus sabdarrifa. Specifically, the tea is made out of the dried fruit part of Roselle, called calyx. It is in red color and tastes like berries.

Hibiscus is perhaps most commonly known for its use as a decorative flower, with its characteristic dark red petals and mild fragrance. In addition, the tropical plant is celebrated for its medicinal properties, and has recently seen an increase in demand worldwide. A potent extract derived from the flower can be used to make a tart tasting tea, which has good antioxidant properties, and may play a role maintaining good health.

Zobo drink is extracted from the flower Hibiscus Sabadariffa by hot water extraction method. The extracted drink is then formulated by addition of preservatives and other materials of nutritional value. The drink is important for its nutritional and medicinal value.

The raw material i.e Roselle Calyces is found in commercial quantities especially in northern part of Nigeria.

 Zobo drink is produced from the red calyces is native to the northern Nigeria, but its consumption has gained wide acceptance all over Nigeria due partly to its speculated antihypertensive properties. 

However, the low shelf life of the drink produced by the traditional method has placed a serious limitation on its general acceptance and consumption in Nigeria. 

The Federal Institute of Industrial Research, Oshodi while realising the many health benefits of Zobo drink has worked extensively on production and preservation of the drink and has developed and perfected a process technology for same. 

Zobo Drink Production Business 

The good news is that research and technological advancement has made it possible for this business to become an agribusiness project to venture into with high return on investment. 

With thought out preservatives zobo drinks has a life span and can be produced, distributed to any part of Nigeria.

What you add to zobo drink depends on the brand you want to produce. 

Zobo drink is becoming commercially packaged, branded and distributed like other drinks. If properly branded with intensive and extensive advertisement it will fly. You should take a clue from zobocola. It is a refined zobo, certified by NAFDAC. Zobocola comes with 40cl and 50cl sizes. 

How To Bottle Zobo Drink 

• There are some bottling samples such as coca cola, spirit, fanta etc. But it should be something uniquely different from others. 

Such that anybody sighting the drink without coming closer will know that is your zobo drink. Mix several flavours until you get the desired taste. 

The taste has to be consistent (write it down somewhere less you forget), uniquely different from any other zobo drink. 

• Print labels and paste them on it. Use a well conned and appealing name that can easily be memorized and pronounced. 

• Make sure the mouth is properly sealed in other to guarantee for its quality and hygienic conditions. Use different sizes of containers such as 50cl, 75cl etc and sell at different prices. 

Preservatives 

The Zobo beverage will stay fresh for a longer period if you use preservatives. There are natural and chemical preservatives. 

The list of natural ingredients you can use includes ginger, garlic, cinnamon, cloves, nutmeg, lime. 

These additional ingredients can preserve the flavor and freshness for a while. 

There are additives you can use for preservatives such as: – 

• Sodium benzoate 

• Potassium Sorbate 

Production Process 

To produce 200 litters of Zobo drink of different flavor the following are the formular: – 

200 litters of zobo drink will give 570 bottles of 35cl. 

Pineapple Flavour 

• 10 mudu of zobo leaves 

• 10 big Pineapple peel (cut to pieces) 

• 250 gm of ginger (blended fresh) 

• 200 litters of water 

• 5 kg of sugar (the sugar quantity depends on individual, due to high of sugar, you can add fresh flavor sweetener to test 

• 25g of Sodium benzoate for preservative 

• 25g of Potassium Sorbate for preservative 

The Process 

• Put your leaves, pineapple peel and ginger in the boiling pot of 200 litters of water. If the boiling pot has a net like inner, then put both the zobo leave, pineapple peel and blended ginger (primary raw material) inside and boil. 

• Once it is boiled, remove the primary raw material from the boiling put. Add sugar and re-boil again, discharge into mixer add Preservatives and sweetener (to your test) and mix. 

• Add Pineapple flavor liquid or powdered then mix again after it has cool. 

• After mixing it, filter it into packaging tank 

• Package into pet bottles. 

This is for natural pineapple flavour but might not be achievable when pineapples become expensive another alternative is using fresh (pineapple) or just pineapple flavour liquid or dry (powdered). For the 10 mudu, 10 bottle of the liquid would do the powdered is usually stronger so you need less of it. 

Cucumber Flavour 

• 15 big Cucumber peel (cut to pieces) 

• 5 kg of sugar (the sugar quantity depends on individual, due to high cost of sugar, you can add fresh flavor sweetener to test 

• When you have boiled your zobo leaves unlike the pineapple please *DO NOT* put your cucumber on the fire with the leaves. The taste would be horrible. 

• Once it is boiled, remove the primary raw material from the boiling pot. Add sugar and re-boil again. 

• After boiling, discharge to the mixer, add your cucumber both peel n fruit itself just dice and throw it. It would infuse the flavour. Add sugar and cucumber fresh sweetener mix to test. 

Ginger Flavour 

• 2kg of fresh or dry ginger (blended) 

• 25g of sodium benzoate for preservative 

• 25g of potassium sorbate for preservative 

• Put your leaves and ginger in the boiling pot of 200 litters of water. If the boiling pot has a net like inner, then put both the zobo leaves and blended ginger (primary raw material) inside and boil. 

• Once it is boiled, remove the primary raw material from the boiling put. Add sugar and re-boil again, discharge into mixer 

• Add Preservatives and sweetener (to your test) and mix. 

• Add fresh ginger flavor liquid or powdered then mix again after it has cool. (Optional. This usually done during scarcity of ginger) 

Ginger Drink 

• 20kg of fresh or dry ginger (blended) 

• Fresh fruit (pineapple, watermelon, cucumber etc.) blended 

• 10 kg of sugar (the sugar quantity depends on individual, due to high of sugar, you can add fresh ginger flavor sweetener to test 

• Wash the ginger, peel off the back and blend put in the boiling pot of 200 litters of water. If the boiling pot has a net like inner, put blended ginger (primary raw material) inside and boil. 

•Once it is boiled, remove the primary raw material from the boiling put. Add sugar and re-boil again, discharge into mixer 

• Add fresh ginger flavor liquid or powdered and the blended fresh fruit you want to produce the flavor then mix again after it has cool. 

• Package into pet bottles.

The first step is purchasing the necessary ingredients which includes, dried hibiscus flower, ginger (or not), sugar, flavouring and water.

These are essential ingredients. Other subsequent components may consist of cut pineapple, slices of oranges and any different suitable fruit flavour.

2). Process For Zobo Production:

The dried hibiscus flower is then slightly washed with cold water (this process is optional) and then put into a pot of boiling water.

A cup of dried hibiscus flowers could approximately be equivalent to 3 litres of water.

The ginger is then properly diced and put into the mix.

The pot should be allowed to boil for at least 30 minutes to enable the hibiscus and ginger essence to diffuse into the water.

When the juice has reached the required boiling time, it is then taken off the oven and set aside to cool.

I never really liked zobo until I learned about its nutritional values, it is one of those drinks that are made purely from natural ingredients.

Just like the fruit juice, you wouldn’t require any artificial ingredients or coloring in most cases.

I would personally recommend just natural ingredients (zobo leaves, ginger, cloves).

But most Nigerians wouldn’t have zobo without the accopanying sweetness.

Here we are going to do it just the way Mama Iyabo does it.

The plate above contains ginger, about 3 fingers of ginger would do. The ginger inset would be enough for 3 cups of zobo leaves.

The first time I had a taste of this drink was at Bori Camp Portharcourt, those days in a secondary school; I visited a friend who happened to come from Yoruba – the best makers of zobo drink.

How to Prepare Zobo

Here is how to make zobo in Nigeria, you will learn about all the ingredients used for making zobo and also why I prefer this above many other Nigerian drinks. With the number of ingredients below, you will make about 3-4 liters of zobo.

Ingredients For Zobo Drink

  • 3 cups of dried zobo leaves.
  • Ginger (2-3 fingers).
  • Flavors and sweeteners
  • 1 tbsp cloves
  • 4 liters of water.

Preparation time: 30mins | Serving: 12 persons

The standard roadside zobo drink can be made with just four ingredients – the zobo leaves, choice of flavor , cloves and ginger.

As you already know, the zobo has a somewhat sugary taste, most people added a few cubes of sugar or just use the regular sachet flavor.

There are several other flavors for making zobo, they come laced with the necessary amount of sweetness. You will find them in any Nigerian market, especially from those selling the zobo leaves.

How to Make Zobo Drink

Hand-pick every unwanted substance from the zobo leaves, wash and start cooking with about 3 liters of water. Don’t soak before washing, just pour water, wash, and transfer into the cooking pot.

Cook to boil before adding the ginger, you can pound them to a pulp or grind with a kitchen blender, the same way I did mine.

Add the cloves too.

Cook for another ten to fifteen minutes before you taste the zobo, it may taste sour.

Allow to cool a little, filter and add the joccy pineapple flavor that already contained sugar.You don’t want it too sweet. So add half a teaspoon and observe. Refrigerate.

That is how to make zobo, it’s easy, right?

Ingredients   .

  • 5-6 cups of dried zobo leaves.
  • 3 fingers ginger
  • 1/2 teaspoon pineapple flavor.
  • 4 liters of water.

Instructions  

  • Remove every unwanted substance from the zobo leaves.
  • Wash and start cooking with 3 liters of water (3000ml)
  • Allow it to boil before adding the ground ginger.

Hi. Just a correction. Zobo is NOT a yoruba drink it’s actually hausa/northern hence the name soborodo. It’s people who can’t pronounce it that call it zobo. It is grown abundantly all over the north (plant not a fan of too rain) Just thought to clear that up. And you use the bark of peeled pinapple (let it have a bit of the fruit its self) and boil it with the leaves then you will have the natural pinapple flavour without the sour taste.

Step 1. The dry leaves from Roselle plant have to be gently washed in cold water.

Keep in mind, that this chemical can change the drink’s taste so you might need also to pour fruit juice to neutralize this effect.

Cook time: 30-35 mins

Ingredients

  • 2 cups of zobo leaves -Hibiscus leaves, also known as Sorrel leaves
  • Citrus fruits of your choice- Orange, Lemon, Lime, Ginger, Cucumber
  • Cloves (2 tablespoons)

Preparation Process

  • Do not soak the leaves without removing all foreign substances, and wash your zobo leaves with warm water.
  • Add the zobo leaves into a clean pot and pour in 2.5-3 litres of water.
  • Add your grated ginger and cut your cucumber and orange into chunks before adding. 
  • Cover pot and leave to boil for 30 minutes
  • Add sugar to your desired taste. Remember to taste as you add, so you don’t make it too sweet. Please give it a good stir and leave it to cool.
  • Sieve through a fine mesh, bottle, and chill in the fridge.
  • Serve and garnish with orange and cucumber, and your zobo drink is ready

Red Lobster off the hook? Federal judge approves restructuring plan

Red Lobster is exiting its Chapter 11 bankruptcy after a federal judge approved the seafood restaurant chain's restructuring plan Thursday — four months after the company first announced it had filed for bankruptcy.

It's a glimmer of good news for the business, which has faced a series of struggles including huge amounts of debt and location closures and several bad business decisions by previous leaders — including its famous $20 all-you-can-eat-shrimp promotion.

As part of the company's restructuring plan, a group of investors under the name RL Investor Holdings LLC will acquire the Red Lobster restaurant chain. The acquisition is expected to close before the end of September, the company announced. Red Lobster will also bring on Damola Adamolekun as the new CEO. Jonathan Tibus, who served as the company's CEO during the reorganization, is set to step down and leave the company.

"This is a great day for Red Lobster," Adamolekun said in a statement. "With our new backers, we have a comprehensive and long-term investment plan – including a commitment of more than $60 million in new funding – that will help to reinvigorate the iconic brand while keeping the best of its history."

After closing a series of locations during its financial issues, Red Lobster still operates 544 locations across the U.S. and Canada — down from its roughly 580 restaurants four months ago.

The money troubles also forced Red Lobster to sell off its defunct locations' equipment — a situation that comedian John Oliver took advantage of.

Oliver, who heads the HBO news show Last Week Tonight with John Oliver , announced in a June episode that his show bought all of the kitchen equipment and furniture f rom an upstate New York Red Lobster New York at auction , then used those items to create his own look-a-like Red Lobster in his studio that sold only the chain's famous Cheddar Bay biscuits.
