Hospitality Industry is one of the fastest-growing industries, whose great variety makes it very interesting area of working. I have never thought about the fascination and the opportunities which this industry offers until the day I started to work as a tourist manager assistant two years ago.

It was a summer job which was supposed to fill up my free time and increase my budget. I knew I was going to like it because I am keen on meeting new people and visiting tourist destinations, but I did not even suspect how much it would affect me.

As an assistant I was required to help the tourist manager accommodate the guests and organize different kinds of entertainment. This job gave me opportunity to become acquainted with the work of such people as hotel, club and event managers.

I was deeply impressed by their diligence to satisfy every need of their customers. I have realized the responsibility of their profession, but I have also understood how satisfied they are when their clients are happy. I will never forget the face of the tourist manager I worked with when the guests thanked him for the perfect holiday. His face was beaming.

Despite the fact I was only an assistant I felt satisfaction too seeing that the tourists were content with our work. This feeling of gratification and even happiness was the main reason why I decided to study Hospitality management. I am fond of knowing more about each sector of Hospitality industry, in which I see my future.

Every manager needs leadership skills. I think I have gained them by participating in diverse activities. I was one of the students chosen to stage a play for the hundredth anniversary of my primary school.

The most difficult task of the organization of the play was to make the children deliver an inspired performance. Eventually I managed to motivate them not only to be good actors but to enjoy acting itself. It produced positive response.

The passion I have for foreign languages ensured my successful participation in the English Language Festival of my school. In this way I have improved my organizational and presentation skills. Being a member of both Eco-club-Mathew and Interact club, the aim of which is charity, I have gained a sense of team spirit.

As a lover of nature the thing I like to do the most is to go hiking and on picnics. I find the nature of England very attractive and I am looking forward to going there and seeing its beauties. Dancing is my hobby too. I have been dancing a modern ballet for five years. This is my way to relax and keep fit.

I am reliable and positive person, who enjoys challenges and never gives up. I dream of managing a hotel, even a chain of hotels. I realise how great my ambitions are and how hard I must work to achieve them but I think it is most important to have a wish and will.

When one who has strong wishes is self-confident and self-motivated, when he is patient and determined he can fulfill them. I know that besides all these qualities I must also have skills in order to succeed in this industry in which there is such a competition. Studying hospitality management I will acquire the necessary skills and knowledge to be a prosperous hospitality manager.

In ten years I imagine myself possessing a five-star hotel on the French Riviera and the first thing I should do to achieve my goal is to take this course at your university.

He is also the founder of OTO, a high-tech company building next generation speech technology with artificial intelligence, which is used to detect and prevent toxicity in online conversations. 

Teo used the skills and knowledge he acquired throughout his degree to launch this successful start-up, which was recently acquired by a major gaming company. 

EHL graduate Janina Pilgrim took a more traditional route after graduating from EHL’s hospitality management programme, working as an assistant manager at one of Asia’s best fine-dining restaurants: Amber, at the Landmark Mandarin Oriental Hong Kong.  

In her role, Janina oversees daily operations, staff training and development and sustainability, working on projects with NGOs and continually reviewing procedures to ensure Amber is a socially responsible restaurant. 

However, Janina says she was one of the few graduates from her class who went into classic hospitality.  

“Many of my classmates are now successful in areas of marketing, finance or real estate. They have utilised the skills we learnt throughout the degree: the overall understanding of business, strategic decision making, marketing and managerial skills,” said Janina.  

In any customer-facing role, excellent customer service skills are essential. A hospitality management degree can teach you the communication and problem-solving skills needed to be an asset in any business environment.  

Janina frequently travelled around the world with her family as she was growing up, staying in hotels that offered excellent customer experience. She remembers a particularly welcoming hotel in Washington DC on her first trip to North America.   

“Having come off a transcontinental flight, we were welcomed by astounding architecture and extremely friendly and professional staff making us feel at home. I knew then that I wanted to be part of this industry and be able to provide this atmosphere to guests,” said Janina.  

At  EHL , students are taught how to give customers a Michelin-star experience by award-winning chefs and industry experts. The hospitality management degree at EHL appealed to Janina due to its mix of  practical and theoretical classes , which helped her better understand the hospitality industry and improve her customer service skills. 

Teo also uses his customer service skills daily, explaining that building excellent customer relationships is essential in every business.  

“Hospitality management is an excellent field of study [for learning] to provide high levels of service and human interactions, which is very valuable to win, retain and satisfy customers and to build a highly functional team,” said Teo.  

Teo was able to apply these  skills both in an advertising business and in his tech start-up.

Janina said: “The classes taught at EHL cover a vast range of areas and subjects, making each graduate an all-rounder that can apply the skills acquired in various fields.” 

She says that EHL adapts its curriculum to meet the business needs of top industry players. An example of this is the increasing focus on sustainability throughout EHL’s international hospitality management curriculum.

Both students stressed that entrepreneurship was an aspect of studying a hospitality management degree that really stood out to them.  

Janina says that entrepreneurship was a skill that she learnt throughout her time at EHL, particularly through the various  extra-curricular activities and committees  she attended at the school.  

“Committees built a big foundation of our campus life, enabling students to further their interests in all aspects and honing their skills,” says Janina.  

She uses the example of EHL’s annual Fête Universelle, where every nationality on campus would have a stand with their own food and drink and prepare a performance. This encourages students to be creative and develop their leadership skills. 

Janina said: “I believe this taught us independence and ownership among other skills. From my experience, in every business environment, people that can take responsibility and ownership are sought after and able to make an impact.” 

Teo also found that his time at EHL helped to sharpen his entrepreneurial skills. 

“I have always had the desire to acquire specific customer and human soft skills that would help me across a wide range of possible projects and businesses,” says Teo. 

Since graduating EHL, Teo has used these skills daily whilst running his business. 

In any industry - but particularly in the hospitality industry - work experience is essential to get your foot in the door.  

In the fourth semester of EHL’s international hospitality management degree, students are encouraged to complete an internship of their choice based on their career aspirations. This internship offers students the possibility to take on responsibilities and apply theoretical administrative and management concepts to real-life projects, teams and departments. 

Entrepreneurs at EHL can use this time to work on their own start-up project, developing the business concept and getting it running with the guidance of expert faculty members. 

Janina said: “My career was shaped by the two internships that I completed during my studies at EHL - one as a food and beverage trainee in a five-star hotel in Germany and the second one in the food and beverage development team for Hakkasan in London.  

“Being exposed to the industry and meeting and learning from top professionals has inspired me to pursue the same career path.” 

After graduation, Janina used the industry contacts she had built to secure herself a job in Hong Kong SAR, working with an EHL alumnus who was starting his own restaurant company.  

“This made me realise the importance of sustainability in food systems, and how much there is still to be done around the world,” she said.

Hospitality & tourism Management AT USF ST. PETERSBURG

Hospitality and tourism is the number one industry in Florida, and a hotbed in the Tampa Bay area. There is a major demand from industry partners in the St. Petersburg - Clearwater area for a hospitality school where talent can be developed and graduates can work in local businesses.

Many opportunities exist for students to receive real-world experiences. For example, USF partners with businesses such as McKibbon Hospitality, which manages 98 hotels and 20 premier brands including Marriott and Hilton, to connect the next generation of hotel managers with hotel industry professionals and gain real-world experience in hotel operations, executive-level leadership and real estate and hotel development. Other business partners include Aramark, the on-campus food service and catering stalwart, and Mainsail Lodging and Development, a specialist in the tourism lodging sector.

The Myth of Tech-Only Solutions: Unpacking Food Waste Management in the Hospitality Industry

Drawing on four years of first-hand observations and collaborative efforts with Chefs and kitchen teams at over 40 global properties, along with my experience as an auditor for various certification bodies, I aim to clarify some practices that may help or impede the management of food waste within hotels and restaurants.

For the past years we have seen tremendous improvements in food waste monitoring led by start-ups proposing “smart scales” . This innovative technology utilizes advanced systems equipped with cameras and sometimes artificial intelligence to identify, weight and categorize various types of food discarded in bins. The data gathered is then presented in detailed reports. These reports quantify the food waste from each meal period by components—such as meat, vegetables, and trimmings—providing measurements in kilograms. The most advanced companies propose to categorize each item depending on the menu, so one is able to identify a chicken curry in the food waste mix. A significant advantage of this technology is its capability to monitor both the weight and the costs of food waste, allowing for comprehensive tracking of financial implications.

The purpose of this article is not to critique the technology or undermine the benefits provided by these “smart scales” . Instead, the focus is on addressing potential misperceptions and incorrect expectations that may arise. The following three issues have been identified:

  • “Smart scales” , as “intelligent” as they may be perceived, do not solve the food waste problem on their own. The issue of food waste in the hospitality industry is complex and involves different actors. There is no silver bullet to food waste management.
  • Management using reports provided by “smart scales” to increase the pressure on Chefs is counterproductive and leads to unintended consequences and questionable practices.
  • Not all the waste generated in kitchens is food waste. It’s essential to separate the waste that can’t be avoided (bones, trimmings, …) and exclude this part from the cost calculation.

In greater details:

1. “Smart scales” limits

Firstly, there is the issue of the overall amount of food that can be monitored. This is especially the case when we are talking about large operations such as hotels’ buffets that create substantial amounts of food waste. Under this scenario, it is practically impossible to individually monitor each plate, or each batch of food thrown away. Separating different type of food waste is very labor intensive thus adding workload to the front- and back-of-the-house teams.

Secondly, “smart scales” provide tremendous level of details which is indeed very useful to understand and appreciate what is being thrown away. However, before looking for such a detailed analysis of each tenth of grams of potato peals, it is crucial to have the big picture. The big picture helps to acknowledge the main food waste streams which are: spoilage, kitchen preparation waste, buffet (if any), guest plates, and staff canteen. The “smart scales” should only be deployed in the restaurants and kitchens that have already monitored and understood their food waste generally speaking and that are now looking for a more detailed analysis. Before searching for the needle in the haystack it is important to have a comprehensive overview of the haystack.

Food waste used to be an invisible problem: food waste disappears in black bags, which are black holes where no one dares to check. Now we have a camera taking pictures of anything getting into the bins. However, these images without context can be wrongly interpreted. These pictures and reports are used by management to ask the Chefs to make a change. Unfortunately, this top-down approach is problematic and leading to new practices in the kitchen whereby Chefs will not monitor the entire food waste anymore and divert a part of it from the snitch in the kitchen: the “smart scales” becoming the enemy instead of the ideal partner to monitor food waste. It is an unfortunate but expected adaptation to management expectations that cannot be fulfilled under the current circumstances.

In the worst-case scenario, Chefs are forced to implement a new tool that is not adapted to their work environment, and they may be resenting the technology providing a wrong picture of the situation. This is the exact opposite of the outcome awaited from that technology.

3. Food waste monetization

A significant benefit of the “smart scales” is that they assign a cost to each piece of food waste: if you throw away 1Kg of beef it will be recorded as well as a cost. The issue here is that some unavoidable wastes have been assigned a monetary value: egg shells, fruits or vegetables trimmings, … So, the daily, weekly or monthly reports provide a distorted vision of what is going on: trimmings, while categorized as food waste, are practically just waste. The science around food waste is still new and adjustments are needed to get to the right picture. One consideration is to understand the difference between food waste and waste produced in the kitchen. As long as this is not solved, we keep getting a wrong image of the food waste monitoring and a limited trust from Chefs.

  • Implement a global monitoring system : before embracing “smart scales” , it is recommended to implement a global monitoring system only focusing on the categories that make sense for the hotel or restaurant. There is no need to get into the details; instead, it is important to have the team trained in the big picture and how to collect the food waste data correctly. Collecting information on food waste takes time and should be done through different seasons and meal periods, until the data is consistent and stable. Then one may go deeper and work with a tool for more details.
  • Analyze the amount of waste produced in the kitchen : It is important to have a good understanding of waste produced that is not relevant for practical food waste management: bones, shells, trimmings… New indicators can then be developed such as: 54% of the waste generated in our kitchen is not food waste but just waste . You may be able to keep this data for all the future calculations.
  • Assign a cost to food waste only : It is best to refuse to have the waste that is not food waste to be assigned a cost by the “smart scales” providers. Ultimately, “smart scales” providers work for you and not the opposite. Their support can be very helpful as long as it is related to what is happening in the kitchens under the leadership of Chefs.
  • Supporting the Chefs : Most Chefs are often doing their best to reduce food waste and they should be supported rather than ostracized. The new tools should be used only when the team is ready to work with those. The team can take advantage of the technology to improve the way it works but again, those new tools should never be forcedly implemented without consent and support. Failing to do so and the collected data may simply not be useful.

“Smart scales” are implemented in a growing number of kitchens and these are good news because it means that the managers and owners understand the value of advanced food waste monitoring. This article aims to warn the different actors against expectations that can’t be fulfilled without respecting some imperative steps. We are now seeing some restaurants where “smart scales” are removed because they were judged inefficient. The scale is not smart, neither intelligent, we, humans caring for food, are the ones to use the tool to our advantage if we follow the organic steps related to food waste monitoring described above.

Hospitality and Tourism Week, September 16-20

The University of South Carolina's School of Hospitality and Tourism Management is hosting its inaugural Hospitality and Tourism Week over Sept. 16-20, with events scheduled each day for students, faculty and staff.

It all starts Tuesday with a special lecture from Professor of Practice Tom Mullkin entitled "Why Ecotourism Matters: A Guide to Saving the Planet." The lecture is set for 3-4 p.m. in Close-Hipp Room 002. All HRSM students, faculty and staff are welcome.

Wednesday brings a chance for students to meet employers from the hospitality and tourism industry to discuss potential internships and jobs. The Hospitality and Tourism Week Career Fair will take place in the University Conference Center on the 8th floor of Close-Hipp from 2-5 p.m.

On Thursday, the focus turns to the rapidly-growing world of beverage management. Professors will cover a variety of topics including event management, club management, hotel management and restaurant management. Class ends with a complimentary beverage*, brewed by School of Hospitality and Tourism Management students.

The standards in hotel management that could be established include the standards related to house-keeping of the hotel. “The main responsibilities of the house-keeping department lie in the need to ‘provide clean and serviced bedrooms on a daily basis to the agreed standards’,” as indicated in the study by Rawstron (1999, p. 114 cited in Frapin-Beauge, Verginis & Wood, 2008, p. 394).

This means that clean rooms are must for the hotel and managers should establish standards for personnel involved into cleaning rooms in accordance with which they would have to do their job.

In accordance with the information introduced in the report by United Nations Environment Programme (2009), the following standards can be established and further assessed in hotel management practices: “documentation, internal audits, employee training, and continuous improvement” (p. 32).

As reported by Boella and Goss-Turner (2005), the customer satisfaction standards are based on the following cycle suggested by Sheraton: the company hires personnel that meets its basic requirements, the employees undergo training to meet all standards of the company, the customers are satisfied with the work of personnel, the customers/manager rate the work of employees, and recognition of employee’s meeting standards (p. 39).

This means that the training can be another way for reaching the standards established because the employees that undergo training are more capable of performing the requirements more accurately and in accordance with the established standards. The management itself can be considered another standard to be established and measured.

Quality management is the best standard which demonstrates performance (Olsen & Zhao, 2008, p. 551). As indicated in the study by Jones and Lockwood (2002), business should fulfil “statutory obligations including rates, taxation, health and safety standards, employment standards” (p. 7), and a number of other standards that may influence the quality of services provided.

Yo (1999) reports about the importance of selecting managers for overseas representation because the process of managing a hotel should be performed in accordance with the common standards for the domestic and foreign allocations (p. 276). In this respect, the taxation and safety of employees and customers as well as management performance are viewed as important ways to see if the management is effective.

According to the study by Mullins (2001), the assessment of hotel keeping standards and their carrying out are performed using the five-star system of evaluation (p. 457). To sum up, the standards that can be established include the following tools:

  • housekeeping – clean rooms;
  • taxation – appropriate tax statement;
  • safety and health – insurance and security systems;
  • food and beverages – quality and cost ratio;
  • quality management – timely and adequate decision-making;
  • customer satisfaction – rating by customers.

To control the purchasing, the manager should take into account the standards and variances with regard to possible backup plans. “The control process was described as having four steps: establishing standards and standard procedures, training staff to follow those standards…, monitoring staff performance…, and taking remedial actions as needed” (Dittmer & Keefe, 2008, n. p.).

In this respect, the control should be performed in accordance with the established standards. The techniques that can be used to control purchasing costs include some of the best practices for this purposes suggested in the study by Institute of Management & Administration (2006).

As such, it is possible to use “return of supplier base reductions” (Institute of Management & Administration, 2006, p. 306) which would serve as one of the ways of reducing purchasing costs. Besides, foreign suppliers can be used if the terms of delivery and pricing are reasonable compared to domestic suppliers.

However, this does not always concerns the facilities that operate using foreign products only; for instance, many sushi bars use Japanese products which means that they are not able to operate without their suppliers. Using software to buy and manage goods can be considered cost-efficient as well as development of supply web to save costs.

Some cost control standards are suggested in the study by Ojugo (2009) who analyses the cost of food and beverages and practices that can be used to influence and control the costs; “Actual food cost is how much you actually spend on food” (p. 194).

In this respect, controlling the recipes, the quality of overall services and products, the process of cooking (if this concerns food), the process of maintaining the goods (if this concerns facilities, commodities, and other items related to hotel).

Dopson and Hayes (2010) review product specifications as one of the methods to make sure that the purchasing costs are not wasted on irrelevant issues. “The purchase price variance for a buy item represents the difference between the item’s standard cost (for value-added material) and the PO purchase price at time of receipt” (Hamilton, 2003, p. 335).

Albrecht, Stice, Stice, and Swain (2007) suggest that measuring variances includes the procedure of comparing the “original budget with the total fixed overhead costs that were actually spent” (p. 972). In other words, the manager should establish standards concerning the purchasing techniques and processes and compare the final costs with the standards.
