You may be quick to blame the barista for changing the recipe, but our recent study,  published in Matter , suggests that this variation is down to an inherent inconsistency of common brewing methods.

The quality of a cup of coffee depends on the coffee’s variety and origin, its roast and the  water chemistry . The brewing method also plays a critical role in determining the overall flavor. Espresso is certainly the most complicated brewing method because it requires precise measurements. However, espresso also happens to underpin all coffee menus, as it is the basis for lattes and cappuccinos.

To make espresso, hot water is forced through a finely-ground bed of coffee. The barista makes decisions about how much coffee and water to use, and how finely the coffee is ground. The machine’s water pressure, temperature and brew volume are also crucial when it comes to taste. Together, these parameters control the relative proportion of around 2,000 different chemicals—a delicate balancing act.

Yet, even if the barista does everything perfectly, there remain large variations between espresso shots made following the same recipe. One shot may taste like raspberries and dark chocolate, and the next like motor oil. And while everyone has different flavour preferences, we believe we have derived a procedure to help the barista out, and achieve the flavour profile they intended, every single time.

Mathematics to the rescue

Our research team—which involved a team of mathematicians, chemists, materials scientists and baristas—formulated a mathematical model to simulate the brewing of an espresso in realistic cafe conditions. We used this to make predictions of how much of the solid coffee ultimately ends up dissolved in the cup. This percentage—known as the  extraction yield —is the key metric used by the coffee industry to assess different coffee recipes.

Solving a series of equations, we found that our model accurately predicts extraction yields that we see in real life, except when the coffee is ground very finely. This is because water flow through the espresso bed is quite unpredictable, resulting in sections of the bed becoming clogged. In other words, parts of the coffee are under-extracted (low extraction yield), while others are over-extracted (high extraction yield).

But the objective of a barista isn’t just to produce shots that taste great, they also have to be reproducible. Consistency can be monitored by examining the extraction yields of different shots. Contrary to our expectation, we discovered that to make consistently tasty brews, the barista should use less coffee and grind the coffee marginally coarser. By doing so, they are able to achieve very reproducible, high-yielding shots.

The mathematical theory tells us that this is because reducing coffee mass means that the water flows faster through the shallower coffee bed. The coarse grind results in a relatively permeable bed, such that water flow and extraction are uniform and predictable. This method leads to fast, bright, sweet and acidic shots that taste the same each time.

Of course, not everyone will enjoy the same flavour profile—and we account for this by presenting a series of procedures that barista can use to help navigate the various flavours available within their coffee. Complex flavours—a result of tasting a mixture of both over and under-extracted coffee—can still be emulated by running and then mixing two shots with different extractions. More importantly, consumers could also simply select a different roast, that features flavour profiles more suited to their palate.

One of our key findings, however, is that baristas are able to reduce their coffee waste by up to 25% per espresso shot, dramatically increasing their annual profits with no sacrifice in quality. Using our protocol we estimate that, in the US coffee market alone, the total savings would amount to $1.1 billion in America’s cafes per year.

What’s more, it has been estimated that 60% of wild coffee species  are under threat of extinction  due to climate change. So ultimately, using less coffee is not only better for making a consistently tasty espresso, it is also better for the environment.

After waiting for four minutes for the coffee to steep, put the lid on and slowly press the plunger down to separate the grounds from the coffee. What it is: Invented in 1941, the Chemex is a specific type of pour over that uses an hourglass shaped vessel and a specially designed filter that is 20–30% heavier than other filters, which helps regulate the flow of water as it passes through coffee grounds.

Twist filter cap onto the chamber of the Aeropress and place securely over a mug or carafe. Add ground coffee into the chamber, then add water and stir. What it is: A siphon is a type of vacuum coffee maker that brews by using vapor pressure to force water to rise into the upper chamber to mix with coffee grounds, then allows gravity to drop the water back into the lower chamber through a filter.

How to make it: Soak the filter in warm water before placing it into the siphon’s top component (the “hopper"), hooking it securely to the glass tubing. Then, fill your siphon's bottom component (the "bulb") with water. Insert the hopper into the bulb before placing it above a burner. Once the water has boiled and risen up to the hopper, lower the heat and add the coffee grounds in the hopper, then stir. Let the coffee brew for 60–90 seconds, then remove the siphon from the burner and stir again. Wait for brewed coffee to drain down to the bulb before serving.

10 Steps from Seed to Cup

The coffee you enjoy each day has taken a long journey to arrive in your cup.

Between the time they’re planted, picked and purchased, coffee beans go through a typical series of steps to bring out their best.

 1. Planting

Coffee seeds are generally planted in large beds in shaded nurseries. The seedlings will be watered frequently and shaded from bright sunlight until they are hearty enough to be permanently planted. Planting often takes place during the wet season, so that the soil remains moist while the roots become firmly established.

2. Harvesting the Cherries

There is typically one major harvest a year. In countries like Colombia, where there are two flowerings annually, there is a main and secondary crop.

In most countries, the crop is picked by hand in a labor-intensive and difficult process, though in places like  Brazil where the landscape is relatively flat and the coffee fields immense, the  process has been mechanized. Whether by hand or by machine, all coffee is harvested in one of two ways:

Strip Picked : All of the cherries are stripped off of the branch at one time, either by machine or by hand.

Selectively Picked: Only the ripe cherries are harvested, and they are picked individually by hand. Pickers rotate among the trees every eight to 10 days, choosing only the cherries which are at the peak of ripeness. Because this kind of harvest is labor intensive and more costly, it is used primarily to harvest the finer Arabica beans.

A good picker averages approximately 100 to 200 pounds of coffee cherries a day, which will produce 20 to 40 pounds of coffee beans. Each worker's daily haul is carefully weighed, and each picker is paid on the merit of his or her work. The day's harvest is then transported to the processing plant.  

3. Processing the Cherries

The Dry Method is the age-old method of processing coffee, and still used in many countries where water resources are limited. The freshly picked cherries are simply spread out on huge surfaces to dry in the sun. In order to prevent the cherries from spoiling, they are raked and turned throughout the day, then covered at night or during rain to prevent them from getting wet. Depending on the weather, this process might continue for several weeks for each batch of coffee until the moisture content of the cherries drops to 11%.

The Wet Method removes the pulp from the coffee cherry after harvesting so the bean is dried with only the parchment skin left on. First, the freshly harvested cherries are passed through a pulping machine to separate the skin and pulp from the bean.  

Then the beans are separated by weight as they pass through water channels. The lighter beans float to the top, while the heavier ripe beans sink to the bottom. They are passed through a series of rotating drums which separate them by size.

After separation, the beans are transported to large, water-filled fermentation tanks. Depending on a combination of factors -- such as the condition of the beans, the climate and the altitude -- they will remain in these tanks for anywhere from 12 to 48 hours to remove the slick layer of mucilage (called the parenchyma ) that is still attached to the parchment. While resting in the tanks, naturally occurring enzymes will cause this layer to dissolve. 

When fermentation is complete, the beans feel rough to the touch.  The beans are rinsed by going through additional water channels, and are ready for drying.  

4. Drying the Beans

These beans, still inside the parchment envelope (the endocarp ), can be sun-dried by spreading them on drying tables or floors, where they are turned regularly, or they can be machine-dried in large tumblers. The dried beans are known as parchment coffee , and are warehoused in jute or sisal bags until they are readied for export.     

5. Milling the Beans

Before being exported, parchment coffee is processed in the following manner:

Hulling machinery removes the parchment layer ( endocarp ) from wet processed coffee.  Hulling dry processed coffee refers to removing the entire dried husk — the exocarp, mesocarp and endocarp — of the dried cherries.

Polishing is an optional process where any silver skin that remains on the beans after hulling is removed by machine. While polished beans are considered superior to unpolished ones, in reality, there is little difference between the two.

Grading and Sorting is done by size and weight, and beans are also reviewed for color flaws or other imperfections.

Beans are sized by being passed through a series of screens. They are also sorted pneumatically by using an air jet to separate heavy from light beans.

Typically, the bean size is represented on a scale of 10 to 20. The number represents the size of a round hole's diameter in terms of 1/64's of an inch. A number 10 bean would be the approximate size of a hole in a diameter of 10/64 of an inch, and a number 15 bean, 15/64 of an inch. 

Finally, defective beans are removed either by hand or by machinery. Beans that are unsatisfactory due to deficiencies (unacceptable size or color, over-fermented beans, insect-damaged, unhulled) are removed. In many countries, this process is done both by machine and by hand, ensuring that only the finest quality coffee beans are exported.  

6. Exporting the Beans

World coffee production for 2015/16 is forecast to be 152.7 million 60-kg bags, per data from the USDA Foreign Agriculture Service .

   

7. Tasting the Coffee

  • First, the taster — usually called the cupper — evaluates the beans for their overall visual quality. The beans are then roasted in a small laboratory roaster, immediately ground and infused in boiling water with carefully-controlled temperature. The cupper noses the brew to experience its aroma, an essential step in judging the coffee's quality. 
  • After letting the coffee rest for several minutes, the cupper breaks the crust by pushing aside the grounds at the top of the cup. Again, the coffee is nosed before the tasting begins.
  • To taste the coffee, the cupper slurps a spoonful with a quick inhalation. The objective is to spray the coffee evenly over the cupper's taste buds, and then weigh it on the tongue before spitting it out. 

Samples from a variety of batches and different beans are tasted daily. Coffees are not only analyzed to determine their characteristics and flaws, but also for the purpose of blending different beans or creating the proper roast. An expert cupper can taste hundreds of samples of coffee a day and still taste the subtle differences between them.   

8. Roasting the Coffee

When they reach an internal temperature of about 400 degrees Fahrenheit, they begin to turn brown and the caffeol , a fragrant oil locked inside the beans, begins to emerge. This process called pyrolysis is at the heart of roasting — it produces the flavor and aroma of the coffee we drink.  

After roasting, the beans are immediately cooled either by air or water. Roasting is generally performed in the importing countries because freshly roasted beans must reach the consumer as quickly as possible. 

9. Grinding Coffee

The length of time the grounds will be in contact with water determines the ideal grade of grind Generally, the finer the grind, the more quickly the coffee should be prepared. That’s why coffee ground for an espresso machine is much finer than coffee brewed in a drip system. 

Espresso machines use 132 pounds per square inch of pressure to extract coffee.

Each coffee fanatic has to find his own personal favorite. It might take dozens of tries just to get the right bean, trying different sources, blends, and roasts. This journey is part of your personal experience, but you won't get anywhere without the right brewing techniques. Here's an overview of every consideration that goes into your perfect cup.

Buying, Storing, and Grinding

Step 1 Buy fresh roasted coffee beans.

Step 2 Try different roasts.

  • While extra-dark roasts have become “sophisticated,” many coffee lovers prefer a medium or medium dark roast that doesn’t scorch away the unique flavors of the bean.
  • If you’re serious about finding your perfect cup, learn to roast your own beans . Once you’ve had some practice, you can make the freshest coffee possible with perfect control over the roast strength.

Step 3 Check the bean origin and type.

  • In your quest for perfect beans, choose 100% arabica beans, or a blend with a small proportion of robusta if you enjoy more caffeine. Not all arabica beans are top notch, especially if sold as a dark roast, but the best examples are much tastier and less bitter than robusta.

Step 4 Store in an airtight container.

  • Temperature changes cause flavorful liquids to condense and evaporate. Keep beans at room temperature, or in the fridge if your kitchen is hot. Freeze only if you have too many beans to use in the next few weeks.

Step 5 Grind right before brewing.

  • For a French press or cold brew coffee, make a coarse grind, with chunky particles similar to potting soil.
  • For drip coffee, make a medium grind, the texture of coarse sand.
  • For espresso, make a fine grind, the texture of sugar or salt.
  • If your coffee tastes too bitter, try a coarser grind.
  • If your coffee tastes flat, try a finer grind.

Brewing Methods

Step 1 Brew with a French press.

  • Remove the lid and plunger.
  • Add the coffee. Use two tablespoons (30 mL) for a one-serving press, or fill to the mark on the side of the press.
  • Pour hot water to the halfway mark, wetting all the grounds.
  • After one minute, stir the floating grounds gently. Add the remaining water and put on the lid, with the plunger pulled fully up.
  • After three additional minutes, press slowly down until the plunger hits bottom. Keep the plunger flat.
  • Pour into a cup. There will be a little sediment in the bottom, which you can swirl in, save for a strong finish, or leave in the cup.

Step 2 Pour through a filter.

Coffee is only as good as its quality, so making the perfect cup of coffee means you’ll need to find high-quality, premium coffee. However, the most important part is to buy whole bean coffee , so you’ll be able to have fresh-ground coffee.

If you do try new roasts, select a roast that’s close to the one you prefer. For instance, if you prefer medium-roast coffee , find a medium-light or medium-dark roast coffee. The basic structure of an essay always consists of an introduction , a body , and a conclusion . But for many students, the most difficult part of structuring an essay is deciding how to organize information within the body.

There are two main things to keep in mind when working on your essay structure: making sure to include the right information in each part, and deciding how you’ll organize the information within the body.

Parts of an essay

The three parts that make up all essays are described in the table below.

You’ll also have to consider how to present information within the body. There are a few general principles that can guide you here.

The first is that your argument should move from the simplest claim to the most complex . The body of a good argumentative essay often begins with simple and widely accepted claims, and then moves towards more complex and contentious ones.

For example, you might begin by describing a generally accepted philosophical concept, and then apply it to a new topic. The grounding in the general concept will allow the reader to understand your unique application of it.

The second principle is that background information should appear towards the beginning of your essay . General background is presented in the introduction. If you have additional background to present, this information will usually come at the start of the body.

The third principle is that everything in your essay should be relevant to the thesis . Ask yourself whether each piece of information advances your argument or provides necessary background. And make sure that the text clearly expresses each piece of information’s relevance.

The sections below present several organizational templates for essays: the chronological approach, the compare-and-contrast approach, and the problems-methods-solutions approach.

The chronological approach (sometimes called the cause-and-effect approach) is probably the simplest way to structure an essay. It just means discussing events in the order in which they occurred, discussing how they are related (i.e. the cause and effect involved) as you go.

A chronological approach can be useful when your essay is about a series of events. Don’t rule out other approaches, though—even when the chronological approach is the obvious one, you might be able to bring out more with a different structure.

Essays with two or more main subjects are often structured around comparing and contrasting . For example, a literary analysis essay might compare two different texts, and an argumentative essay might compare the strengths of different arguments.

There are two main ways of structuring a compare-and-contrast essay: the alternating method, and the block method.

Alternating

In the alternating method, each paragraph compares your subjects in terms of a specific point of comparison. These points of comparison are therefore what defines each paragraph.

  • Distance learning: Difficulties with online work (lack of tech literacy, unreliable connection, distractions)
  • Classroom learning: Tends to encourage personal engagement among students and with teacher, more relaxed social environment
  • Distance learning: Greater ability to reach out to teacher privately
  • Sum up, emphasize that distance learning introduces more difficulties than it solves
  • Stress the importance of addressing issues with distance learning as it becomes increasingly common
  • Distance learning may prove to be the future, but it still has a long way to go

In the block method, each subject is covered all in one go, potentially across multiple paragraphs. For example, you might write two paragraphs about your first subject and then two about your second subject, making comparisons back to the first.

  • Disadvantages: Difficulty of identifying struggling students and aiding them unobtrusively, lack of personal interaction among students
  • Advantages: More accessible to those with low tech literacy, equality of all sharing one learning environment
  • Disadvantages: Students must live close enough to attend, commutes may vary, classrooms not always accessible for disabled students
  • Advantages: Ease of picking up on signs a student is struggling, more personal interaction among students
  • Disadvantages: May be harder for students to approach teacher privately in person to raise issues

An essay that concerns a specific problem (practical or theoretical) may be structured according to the problems-methods-solutions approach.

This is just what it sounds like: You define the problem, characterize a method or theory that may solve it, and finally analyze the problem, using this method or theory to arrive at a solution. If the problem is theoretical, the solution might be the analysis you present in the essay itself; otherwise, you might just present a proposed solution.

In longer essays whose body is split into multiple named sections, the introduction often ends with an overview of the rest of the essay. This gives a brief description of the main idea or argument of each section.

The overview allows the reader to immediately understand what will be covered in the essay and in what order. Though it describes what  comes later in the text, it is generally written in the present tense . The following example is from a literary analysis essay on Mary Shelley’s Frankenstein .

Transitions

Transition words and phrases are used throughout all good essays to link together different ideas. They help guide the reader through your text, and an essay that uses them effectively will be much easier to follow.

Various different relationships can be expressed by transition words, as shown in this example.

Because Hitler failed to respond to the British ultimatum, France and the UK declared war on Germany. Although it was an outcome the Allies had hoped to avoid, they were prepared to back up their ultimatum in order to combat the existential threat posed by the Third Reich.

Transition sentences may be included to transition between different paragraphs or sections of an essay. A good transition sentence moves the reader on to the next topic while indicating how it relates to the previous one.

… Distance learning, then, seems to improve accessibility in some ways while representing a step backwards in others.

It’s also possible to combine both methods, for example by writing a full paragraph on each of your topics and then a final paragraph contrasting the two according to a specific metric.

You should try to follow your outline as you write your essay . However, if your ideas change or it becomes clear that your structure could be better, it’s okay to depart from your essay outline . Just make sure you know why you’re doing so.

At the first stage of the process, coffee beans are picked by hand before being dried in the sun. The dried beans are then roasted, cooled quickly and put in a grinder where they become ground coffee. After that, it is mixed with hot water, and this mixture is then strained and frozen, ready for the next step.

At the following stage of the process, the grinder is used once again to grind the frozen liquid, which is then dried in a vacuum. At this point, the high temperature in the vacuum causes the water to evaporate, leaving only the ground coffee, which is put into different coffee containers. These coffee jars are delivered to shops and supermarkets, ready to be sold to consumers.
